Student dinners offer fine fare
Had your share of casserole and pizza recently? Students in ISU's "fine dining
management" class this fall have the ticket for you: themed evening dinners,
including multiple courses and entertainment, in the Joan Bice Underwood
Tearoom, MacKay Hall.
The first, a "culinary tribute to theater," will be held Wednesday, Nov. 12,
and includes a mix of live vocal and instrumental music from four stage
productions: Chicago, Les Miserables, Miss Saigon and Phantom of
the Opera. Karla Boetel, executive chef with ISU Dining, will serve as
head chef.
The second dinner will be held Wednesday, Dec. 10. Menu items will honor
American tycoons, including Andrew Carnegie, John D. Rockefeller, Henry
Ford, Warren Buffett, Donald Trump and Oprah Winfrey. Kurt Chausse, chef at
Aunt Maude's restaurant, Ames, will prepare the meal.
The dinners begin at 6 p.m. Tickets are $55 per person and available in 1055
LeBaron or by calling 4-9371. Reservations are required.

Smoked honey quail with mustard-tangerine vinaigrette sauce
Hot and sour shrimp soup with shitake mushrooms
Vodka with pomegranate juice
Tornedos Rossini with Madeira sauce
Tart masked with white chocolate and hazelnut

Lobster salad on croustade with mango and caviar garnish
Roasted lamb with mushroom ragout
Mixed greens salad with roasted beets and poached pear with bleu cheese
mousse
Chicken consomm
Grapefruit and parsley sorbet
Grilled tuna, poached sea bass and seared scallops in prosciutto
Peach crepes and chocolate, cherry and chile biscotti
